Thick, creamy and full of flavour – what’s better in Fall than a delicious pumpkin soup?
- 1 onion
- 200 g leek, sliced
- 1 Tbsp sugar
- 1 l stock
- 500 g chopped hokkaido pumpkin
- 1 apple, cored and diced
- pepper, salt, chili (optional), nutmeg
- Add onion, leek, sugar, pumpkin, apple and stock into a large pot or saucepan. Bring to a boil then reduce heat and simmer for 30 minutes.
- Add some chilli, salt and pepper and purée until smooth, adding water if too thick.
