Pumpkin Soup

Thick, creamy and full of flavour – what’s better in Fall than a delicious pumpkin soup?


  • 1 onion
  • 200 g leek, sliced
  • 1 Tbsp sugar
  • 1 l stock
  • 500 g chopped hokkaido pumpkin
  • 1 apple, cored and diced
  • pepper, salt, chili (optional), nutmeg


  • Add onion, leek, sugar, pumpkin, apple and stock into a large pot or saucepan. Bring to a boil then reduce heat and simmer for 30 minutes.
  • Add some chilli, salt and pepper and purée until smooth, adding water if too thick.
